I love eggs. They’re cheap, they’re healthy, and there are so many ways to get creative with them that don’t take a ton of time or attention. The thing is, lots of egg dishes—hash, baked eggs, frittatas, even poached or soft-boiled eggs—do take a little while to cook, even though it’s just a matter of waiting for the eggs to boil, or letting them firm up in the oven for a half hour. It’s not active cooking time, but it’s time I don’t have in the morning.

The solution, obviously, is breakfast-for-dinner. I’ve written before about how I’ve been pretty lazy with meal prep lately, so egg dishes are my solution when I want something warm and homemade, but also want to spend most of the evening watching TV. On nights when I get home especially hungry, I make egg-and-veggie sandwiches that are ready in under 15 minutes. When I’m willing to wait a little while for dinner, I make baked eggs or hash. While they sit in the oven, I sit on my couch and catch up on The Bold Type.
