It’s naturally keto friendly, paleo, has a vegan option, and is just all-around healthy no matter your way of eating. If you want to know how to make vegetable soup that’s super simple, uses common ingredients, and takes less than 30 minutes, this one’s for you.

Homemade vegetable soup makes a regular appearance at our house in the winter. It’s warming, it’s filling, and it’s good for us. (I make this keto veggie soup for something light yet hearty, but for a full meal, I make keto beef stew!) Plus, this one is a balance between flavor and simplicity, so I’m pretty sure that makes it the best vegetable soup recipe ever. 😉

Is Homemade Vegetable Soup Healthy?

Is vegetable soup healthy for weight loss? Yes, definitely! No matter what type of diet you follow, no one can argue that a big bowl of homemade vegetable soup is healthy for you.

In fact, I’d say that if your question is, “What is the healthiest soup?” – this one just might be the answer. It’s packed with so many different types of veggies for loads of nutrients, but at the same time it’s light on calories and carbs.

Is Vegetable Soup Low Carb?

Is vegetable soup keto friendly? Yes, it can be. While it’s true that carbs can add up with certain types of veggies, this low carb vegetable soup recipe can fit into even the lowest carb diets.

More specifically, this keto vegetable soup has 8 grams net carbs per serving. And, all the carbs come from veggies, which is always a good thing. It’s definitely the best vegetable soup recipe in my book!

What Vegetables Go In Vegetable Soup?

You can use almost any veggies you like! This low carb vegetable soup recipe contains these veggies:

  • Onions
  • Bell peppers
  • Garlic
  • Cauliflower
  • Green beans
  • Diced tomatoes

How To Make Low Carb Vegetable Soup on the Stove

Now, I’ll show you my step-by-step process for how to make vegetable soup on the stove. It’s super fast!

To start, saute some onions and bell peppers in olive oil until they are nice and soft. The onions should start to brown a bit. Feel free to saute to your liking! I like them nice and browned, to the point where the onions are starting to caramelize.

Add the minced garlic and saute for a minute longer, to let the flavor develop.

Add the rest of the soup ingredients – cauliflower, green beans, canned diced tomatoes, broth and Italian seasoning. Stick a couple bay leaves in there, too, along with salt and pepper.

PRO TIP: You can use any broth you like! I prefer the flavor of chicken broth, which saves on carbs, but if that’s not a big deal, vegetable broth makes this a low carb vegetarian vegetable soup recipe (and vegan, too!).

Bring the soup to a boil, cover, and simmer for 10 to 20 minutes, until the veggies are soft. I love that this is so quick!

How To Make Vegetable Soup in a Crock Pot

What if you want to make low carb vegetable soup in a Crock Pot instead? You can!

For crock pot version, you’ll still need to saute the onions, peppers, and garlic first, just like above. Then place these into the Crock Pot along with the remaining ingredients.

How long to cook keto vegetable soup in a slow cooker? Cook on 2 hours on High or 4 hours on Low.

What Can I Add To My Vegetable Soup For Flavor?

My preferred seasoning for homemade vegetable soup is Italian seasoning. It tastes great and saves time getting out multiple seasoning containers. And if your pantry is not fully stocked with every spice and dried herb under the sun, Italian seasoning is a good all-purpose option to buy.

But, if you prefer to mix your own and aren’t sure which herbs to use for vegetable soup, try these herbs (and spices, and other add-ins!) in any combination you like:

  • Basil
  • Rosemary
  • Thyme
  • Parsley
  • Sage
  • Oregano
  • Lavender
  • Marjoram
  • Tarragon
  • Paprika – regular or smoked!
  • Lemon zest
  • Ginger root
  • Star anise
  • Turmeric
  • Bay leaves
  • Sea salt – a must!
  • Pepper – black, white, cayenne or even chili

Just remember that overdoing it can be just as bad as skipping the spices. Pick one flavor profile to stick to, either with a tried-and-true seasoning mix or by choosing a couple herbs and spices to focus on.

In addition to herbs and spices, sometimes a soup just needs PH balance. Lemon juice or vinegar can add more acidity, while heavy cream or coconut cream can make it more alkaline.

How To Solve Common Issues with Keto Vegetable Soup

This homemade vegetable soup recipe is pretty classic and versatile, so hopefully you won’t have any issues! But if you do, here is how to solve them:

  • Vegetable soup too sweet? Add a splash of vinegar or a bit more salt.
  • Vegetable soup too bland? Add more salt first as that’s the most common issue. If it’s salty enough, try more herbs and spices – see ideas above!
  • Vegetable soup too spicy? If you don’t mind changing the type of soup a bit, the best way to tame spiciness is by adding a bit of heavy cream (or coconut cream if you are dairy-free). If you don’t want a creamy vegetable soup, you can try diluting the spiciness with more broth. A splash of vinegar can also help.
  • Vegetable soup too salty? Vinegar or lemon juice can help balance out the salt, so try adding one of these. Another good option is an additional can of diced tomatoes, because it will balance the salt without requiring you to cook the soup for longer.
  • Vegetable soup too acidic? Similar to fixing vegetable soup that’s too spicy, heavy cream or coconut cream can tame soup that’s too acidic. Some people also recommend sifting some baking soda onto the surface of the soup, since it’s alkaline, but I haven’t tried it to verify.

Can You Freeze Vegetable Soup?

Yes, you can freeze vegetable soup. It freezes great! Let it cool to room temperature, then pour into airtight zip lock bags. Lay flat in the freezer until solid, and after that you can move them upright to save space if needed.

To thaw low carb vegetable soup, simply let the bag sit in the fridge overnight (in a container or pot to be safe, in case it leaks!), then heat on the stovetop.

  • 1 large Onion (diced)
  • 2 large Bell peppers (diced, the same size as onions)
  • 4 cloves Garlic (minced)
  • 1 medium head Cauliflower (cut into 1-inch florets)

  1. Heat olive oil in a pot or dutch oven over medium heat.

  2. Add the onions and bell peppers. Saute for 7 to 10 minutes, until onions are translucent and browned.

  3. Add the minced garlic. Saute for about a minute, until fragrant.

  4. Add the cauliflower, green beans, diced tomatoes, broth, and Italian seasoning. Adjust sea salt and black pepper to taste. Add the bay leaves, if using.

  5. Bring the soup to a boil. Cover, reduce heat to medium low, and cook for about 10 to 20 minutes, until veggies are soft.

VEGETABLE SOUP

Vegetable soup is an easy to make go-to when losing weight. Many dieters are forever looking for something to keep them satiated in between meals, and there’s nothing like a warm bowl of soup to fill up on.

You can serve it as a main with your favourite protein, like roast chicken, baked salmon or a steak.

Finding all of your fresh veggies chopped and packed for you is a bonus in the prepping department.

HOW DO YOU MAKE HOMEMADE VEGETABLE SOUP?

You can follow our recipe or clean out your fridge and use whatever vegetables you have on hand.

We load our soup with cabbage, celery, green beans, zucchini, cauliflower and spinach. Carrots are optional, especially if you’re strict Keto. The greener your soup, the lower in carbs it will be. You can even make your own Bone Broth.

Substitute some of our veggies with broccoli florets, green peppers, peas, eggplant, asparagus, kale, brussels sprouts or mushrooms.

Don’t care about carbs? Feel free to add in corn, potatoes or butternut squash.

HOW DO YOU LOSE WEIGHT WITH VEGETABLE SOUP?

Vegetable soup is naturally low in carbs and calories, which makes it the perfect snack to heat up through the day and eat between meals. It helps keep you full until the next meal without adding too many calories or carbs to your daily intake.

Although it’s not a magic pill OR will not slim you down on it’s own, this soup DOES help keep you satisfied during the day before your next main meal. Healthier than reaching for a packet of chips or anything in a packet.

If you need fats in your diet, feel free to add avocado, oil (like coconut oil), or animal fats to the soup.

WHAT SEASONINGS DO YOU PUT IN VEGETABLE SOUP?

Our recipe includes herbs like parsley, thyme or cilantro. We also add in Cayenne for some heat. Vegetable soup is so versatile you can add any other seasonings you have on hand, like Italian herb blend/seasoning or Moroccan.

Other ingredients you can add for flavour:

  • crushed or fire roasted tomatoes
  • parmesan cheese at the end of cooking time
  • chili flakes
  • a splash of heavy or thickened cream
  • paprika
  • ground cumin
  • hot sauce

CAN I FREEZE VEGETABLE SOUP

The best part about vegetable soup is you can make how you want it and use it as inexpensive meal preps. Pour serving sizes into airtight freezer containers or ziplock bags, then simply thaw out and reheat when needed.

Reheat in a microwave safe bowl in the microwave or on the stove.

  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 1/2 cup chopped celery
  • 2 medium carrots peeled and chopped
  • 6 cloves garlic finely chopped
  • 2 zucchini chopped
  • 10 oz (300 g) fresh green beans sliced into 1-inch pieces
  • 10 oz (300 g) cauliflower florets
  • 4 cups chopped cabbage leaves, washed (about 1/4 of a head)
  • 2 quarts (2 litres) low sodium beef stock (chicken or vegetable broth may be used)
  • 2 teaspoons beef bouillon powder, (chicken or vegetable may be used)
  • 1 teaspoon cayenne pepper (if desired — adjust to your heat preference)
  • 1 teaspoon salt to season
  • 1/2 teaspoon freshly ground black pepper
  • 4 cups loosely packed spinach leaves washed
  • 1/4 cup packed chopped fresh parsley leaves
  • 2 teaspoons freshly squeezed lemon juice
  • Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat. Once hot, add the onion, carrots and celery. Sauté until they begin to soften, about 8 minutes.
  • Add the garlic and sauté until fragrant, about 30 seconds. Then add the zucchini and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally.
  • Throw in the cauliflower and cabbage leaves. Add the stock, increase the heat to high, and bring to a simmer. Once simmering, season with the buillion and cayenne. Taste test and season with salt and pepper.
  • Reduce the heat to low, cover, and cook until the vegetables are fork tender, about 20 minutes. Add the spinach leaves and stir through until wilted.
  • Remove from heat and add the parsley and lemon juice.
  • Adjust seasonings. Serve immediately.

This Low Carb Soup recipe is one of the healthiest you can make. Loaded with not only fiber and fat it high on the electrolytes sodium and the much-neglected potassium.

We set out to make a low carb soup recipe that would be a super energy booster and fatigue beater.

Both broccoli and leeks are high in potassium and this is essential for well being. Read about the importance of potassium here.

Broccoli, in particular, is a great addition to your ketogenic diet. It’s a low carb vegetable (4.4g net carbs per 100g). Broccoli is a superfood full of nutrients.

Ingredients for Keto Broccoli & Leek Soup

  • 1 Leek, white part only
  • 1 cloves of Garlic, roughly chopped
  • 3 ounces of Butter, salted
  • 1 pound of Broccoli (2 medium heads)
  • ½ cup of Heavy Cream
  • 2 ½ cups of Chicken Stock
  • 1 teaspoon of Salt
  • 1 teaspoon of Pepper

We prefer to use a stick blender rather than a traditional blender. Pureeing hot soup is much safer, easier and cleaner with a stick blender.

How To Make Keto Broccoli & Leek Soup

  • Roughly chop the white part of the leek and place into a large saucepan, along with the butter and garlic.
  • Saute the leeks over low heat until they are beginning to turn translucent. Add the cream.
  • Cut the broccoli into evenly sized florets and place into the saucepan.
  • Add the chicken stock and stir. Ensure that the broccoli is mostly covered.
  • Simmer on low to medium heat for 8 minutes. I
  • f you cook the broccoli too quick, it will discolor and turn the soup an off brown color.
  • The broccoli is cooked when it is easy to break up with a spoon.
  • Using a stick blender, carefully blend the soup until no lumps are remaining.
  • Stir in the salt, pepper and parsley. Adjust seasoning to taste. Enjoy!

Beware: Putting the lid on a traditional blender filled with hot liquid can cause the lid to explode off.

This creamy Cauliflower Leek Soup takes just 30 minutes to make, start to finish.

It’s the season for warm sweaters, cozy slippers, and warm, comforting soups… and I’m loving it! On a cold day, it’s hard to beat a hot bowl of soup for lunch or dinner. And if that soup is quick and easy to prepare, well, that’s even better.

If you have 30 minutes and just a few ingredients, you can make this creamy yet healthy Cauliflower Leek Soup. Half of that time is inactive cook time, so while your soup simmers you can make a salad, slice some bread, and set the table. Then it’s time to sit down, relax and enjoy.

Don’t you love recipes with short ingredient lists? If you don’t count the salt and pepper, this soup calls for just six ingredients. And two of the six are olive oil and garlic, which should be pantry staples. A sprinkle of fresh thyme or grated cheddar cheese on top will add an extra punch of flavor to your soup.

The flavor of this Cauliflower Leek Soup is mild, yet delicious. The cauliflower cooks down and, once pureed with a blender, becomes ultra smooth. It lends a natural creaminess to the soup. I added 1/2 cup of half and half to my soup to really bring out that creamy texture. You can choose to use milk instead, or omit the dairy altogether for a vegan version, if you like.

I love the mild onion flavor that fresh leeks bring to soups. I have a potato-leek soup recipe that I adore, as well as a butternut squash and leek soup that warms you from the inside out. So when Lori said she’d love for me to share a cauliflower soup recipe with you, I knew it had to have leeks in it for added flavor. The cauliflower, leeks, and garlic blend together perfectly in this comforting Cauliflower Leek Soup.

Cauliflower Leek Soup

Yield: 4 to 6 servings

Prep Time:15 minutes

Cook Time:15 minutes

Ingredients:
  • 2 large leeks, white and light green parts only
  • 2 tablespoons olive oil
  • 1 head cauliflower (about 2 pounds)
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup half and half (or milk)
  • salt and pepper, to taste
  • fresh thyme or grated cheddar cheese for serving, if desired
Directions:
  1. Slice the leeks in halve lengthwise, and then slice into 1/4-inch wide half-rounds. Rinse well in a colander under cold water; drain.
  2. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the leeks and cook, stirring often, until they begin to soften, about 3 minutes.
  3. Meanwhile, rinse the cauliflower, core, and chop into 1-inch pieces. (This is most easily done by first cutting the cauliflower in half, and then into fourths. Slice out the core, and cut the florets apart.)
  4. Add the garlic to the pot with the leeks and cook, stirring, for 1 minute. Add the cauliflower and cook for 2 minutes to lightly brown.
  5. Pour in the vegetable broth. Increase the heat and bring to a boil. Reduce the heat to a low simmer, cover, and cook for about 15 minutes, until the cauliflower is tender when pierced with a fork.
  6. Puree the soup using an immersion blender or regular blender. If transferring to a regular blender, do so in batches. Do not fill the blender more than half full each time. Return the soup to the pot after blending.
  7. Once the soup is pureed, stir in the half and half (or milk) and season to taste with salt and pepper. Serve garnished with fresh thyme and/or cheddar cheese, if desired.

  • This soup has 2 Weight Watchers Freestyle SmartPoints per serving (6 servings) if made with nonfat milk. Toppings are extra.
  • This soup can be made vegan or dairy-free by omitting the half and half or milk. Serve topped with fresh thyme, rather than cheese.

Low Carb German Leek And Cheese Soup With Ground Beef

Germany certainly isn’t known for healthy dishes that are suitable for a low carb diet.
If anything most people associate Germany with their famous bread and beer, which are indeed super delicious but neither healthy nor low carb.

Well, this little gem is an exception!
While it’s not well known outside of Germany, it’s a classic here in Germany.
It’s usually served for parties and gatherings but I figured it’s such a great fit for the low carb diet that it would be a shame to not include it in my diet as an everyday recipe as well!

I modified the recipe to make it even lower in carbs than most of the traditional versions, but with 9.3g net carbs it’s relatively high in carbs and may not be the best choice if you’re on a very strict ketogenic diet (under 20g carbs per day) hence why I chose to put low carb in the title and not keto.

But it’s my duty to add that this soup is incredibly filling.
Seriously, two servings of this soup will satiate you for almost an entire day and even though it might add almost 20g to your carb count, it can still be totally fine for the ketogenic diet as well if you adjust your remaining meals for the day to match that carb count.

In the end, it’s your choice but I highly recommend to try it out!
(It takes only 30 minutes to make it!)

LOW CARB GERMAN LEEK AND CHEESE SOUP INGREDIENTS:

This section is where I’ll explain a few things about the ingredients needed for this recipe as well as tips + suggestions!

(You can find the exact amounts needed on the recipe card at the end of this post.)

  • ground beef
  • onion: finely chopped
  • leek: chopped
  • vegetable stock
  • cheese spread:
    This is the trickiest thing about this recipe, at least if you’re living in the US.
    In Germany, this recipe is usually made with a specific kind of cheese spread that’s readily available and I had a bit of a hard time finding out what equivalent can be found in the US to make this recipe.

    After a bit of digging in a few German expat forums I found that the laughing cow’s spreadable cheese is the closest thing to what we use here in Germany.

    So if you can, I recommend trying to get your hands on that or something similar.
    If you can’t find anything close to it, you can also try to use normal cream cheese, but I haven’t tried that myself though.
    I’m guessing the taste would be different but it might be worth a try. 🙂

    I’ve heard from so many of you that you’re looking for low carb recipes! And it’s winter so low carb soup recipes are perfect.

    I’m in the same boat. I love to eat low carb recipes at night before I go to bed and tend to eat the majority of my carbs in the first half of the day. For example, today I ate these blueberry overnight oats for a snack and quinoa, sweet potato taco bowls (recipe coming soon!) for lunch.

    Why I eat more of my carbs early in the day: When I wake up I want extra energy from the carbs to keep me energized during the day. This keeps me focused and gives me long lasting energy for workouts. I like to eat low carb recipes in the evening because I don’t do a ton in the evenings and don’t need as much energy from carbs at night and when I’m sleeping.

    Obviously this isn’t a hard and fast rule by any means for me but when I’m meal prepping recipes like turkey vegetable low carb soups, I try to be mindful of this because it just makes me feel better!

    Another reason I love this low carb vegetable soup is because it forces me to eat my veggies in a delicious and easy way! I don’t know if you’re like me but I STRUGGLE eating enough veggies during the day.

    INGREDIENTS

    • Meatballs:
    • 1 lb ground turkey
    • 2 teaspoons Italian seasoning
    • 2 tablespoons almond flour or coconut flour
    • 1/2 teaspoon sea salt
    • 3 tablespoons dairy free milk I used cashew milk
    • 1/4 yellow onion diced small
    • 1 clove garlic minced
    • Soup:
    • 4-6 large carrots peeled and chopped

    INSTRUCTIONS

    • While warming, make the meatballs. In a large bowl, combine all of meatball ingredients and mix well with your hands to combine everything. Roll into 1-2 inch meatballs and place, uncooked, on top of the vegetables in the crock pot.
    • Once all of meatballs have been rolled, cover the crock pot and cook for 6-8 hours until the veggies and meatballs are cooked.
    • Cover and store in an air tight container for up to one week. To freeze, place in a plastic freezer bag or large air tight container and store in the freezer for up to 3 month.

    • 2 cups chicken or vegetable broth for vegetarian
    • 1/2 cup frozen peas , carrots, corn or any combination of these
    • 1 teaspoon grated ginger (optional for fragrant spice)
    • 1/2 teaspoon sesame oil
    • 2 teaspoons soy sauce , or to taste
    • 1 teaspoon corn starch (optional)
    • 1 teaspoon water (optional)
    • 2 large eggs , beaten
    • 2 stalks green onions , diced
    • salt , to taste
    • black pepper , to taste

    Directions

    1. In a pot add broth, peas-carrots-corn, ginger, sesame oil and soy sauce. Bring to a boil then reduce to low heat.

    2. (optional) Create the corn starch slurry: in small bowl, combine the corn starch and water. Stir to dissolve the corn starch and remove all clumps. Add this mixture to the soup and give it a good stir.

    3. Add eggs into the soup and gently swirl so that the egg looks like ribbons in the soup. When egg is cooked, add the green onions and remove soup from heat.

    4. Stir, then taste the soup and add additional salt and pepper, to taste.
